Kale chips are fast becoming a staple food in our household and I make them, with my daughter, currently four years of age. These are simply delicious and once you have made a few trays, you'll find they don't stick around for too long!
You will need:
A dehydrator! (I tried these in the oven and they just didn't work out) I really recommend, if you're looking to get your family eating more nutritious, live and delicious foods to get one - I started out with a Stockli, but honestly, the Excalibur is brilliant. I have one on loan from a good friend and it's much better!
You will also need...
2 bags of kale. (Wash thoroughly)
De-stalk the kale - put the bowl in the middle of the room and get everyone to pitch in!
For the sauce:
In the blender, place:
3 tomatoes
1 de-seeded red pepper
2 cloves garlic
1 red onion, chopped
juice of half a lime
juice of half a lemon
3 tbsp olive oil
1 tsp honey
a splash of tamari
a drizzle of balsamic vinegar
2 tsp paprika
2 tsp mixed herbs
Blend well then add:
1 cup of pre-soaked nuts and seeds (optional - it's fine without them but makes it a thicker sauce)
Blend again
Now, massage the sauce into the kale. Work it in really well!
Sprinkle in some extra chopped tomatoes and red onion.
Then spread the kale over the dehydrator sheets.
And way you go! I set mine at 66 degrees for the first three hours then down to 46 degrees. I leave mine for at least 12 hours, if not longer as I like 'em crunchy as anything!
